1 small tomato, chopped 1 garlic clove, peeled 1 tablespoon chicken flavor bouillon 1 can ( 8 oz.) tomato sauce 2 1/2 cups water 1 cup long-grain rice 1/4 cup vegetable oil 2 tablespoons white onion, chopped 1 1/4 teaspoon salt or to taste
Put tomato, garlic, chicken bouillon, tomato sauce and 1/2 of the water into a blender and blend to a smooth puree. Rinse and drain the rice well in cold water. Heat the oil well. Add rice. Stirring from time to time over medium heat until it is a pale gold color. Add onions and sauté until soft. Turn off heat, drain off any excess oil and let it sit about 2-3 minutes. Add the tomato puree to the rice and cook over a high heat for about 3 minutes. Add remaining water (2 cups) and salt. Bring to a boil, cover the pan and continue cooking over a very low heat for 15-20 minutes more. Do not stir during this time. Serves 6
