3 medium potatoes, peeled
1/3 cup vegetable oil
1/3 small onion, finely chopped
4 eggs, beaten
1 cup marble cheese, shredded
salt and pepper to taste

 

Cut potatoes into small cubes. Rinse with cold water. Drain well and pat dry on paper towels. Heat the oil well. Add potatoes and cook covered over medium heat, about 10 minutes or until tender, stirring occasionally. Uncover, stir in the onions and cook for 10 more minutes or until golden brown. Add the eggs and stir until set. Top with cheese. Cover the pan and cook for about 1 minute until cheese has melted. Serve immediately.
