2 tablespoons vegetable oil
1/3 small onion, finely chopped
4 Serrano chilies, finely chopped
3 small tomatoes, finely chopped
6 eggs, beaten
salt to taste
 


Heat the oil well over medium heat. Sauté onions and chilies until soft. Add tomatoes and salt. Fry the mixture until it is well cooked, stirring from time to time. Add eggs, more salt and stir until cooked. Serve immediately with hot tortillas.
