1 pound tomatillo (yellowish in color)
6 serrano chilies
1 cup water
1 garlic clove, peeled
1/4 teaspoon salt or to taste
*1 tablespoon chopped cilantro, optional
*1 tablespoon chopped onion, optional


Remove the papery husks from the tomatillos and rinse well. Put tomatillos and chilies into a saucepan with one cup water. Bring to a boil, cover, reduce heat and simmer for 10 minutes. Drain and reserve liquid. Put chilies, garlic, salt and 1/3 cup of the reserved liquid in a blender. Blend until smooth about 10 seconds. Add tomatillos and blend to a fairly smooth sauce. Add more of the reserved liquid if necessary.

*Sprinkle with chopped cilantro and onion.

Makes 1 1/2 cups
